A salmon that stands out thanks to a crunchy caramelized nut topping — the kind of dish that looks like it took effort but stays simple enough for a weeknight.

Sugar-free maple syrup glazes the fish as it cooks, and a light dusting of brown sugar substitute on top builds a nice caramelized crust in the oven.

Ingredients

  • 4 salmon fillets
  • ¾ cup pecans or walnuts, chopped
  • 3 tbsp butter, divided
  • 2 tbsp sugar-free maple syrup
  • 1 tbsp brown sugar substitute (e.g. Swerve Brown)
  • Salt, pepper

Steps

  • Preheat the oven to 400°F (200°C).
  • Place the salmon on a lined baking sheet, season with salt and pepper.
  • Brush the salmon with maple syrup, then lightly dust with the brown sugar substitute.
  • Bake 12-15 minutes depending on thickness.
  • Meanwhile, sauté the chopped nuts in the remaining butter in a pan (or air fryer) for 3-4 minutes, until lightly golden.
  • Scatter the caramelized nuts over the salmon just before serving.

Our tips

Pecans give a softer, buttery flavor, walnuts a bolder one — both work well here. For even deeper caramelization, finish the salmon under the broiler for 1-2 minutes at the very end.
