Three ingredients, one bowl, and twelve minutes in the oven — probably the simplest dessert on the whole site.

Peanut butter replaces both the fat and the flour, giving the cookies a dense, satisfying bite.

Ingredients

  • 1 cup natural peanut butter
  • ⅓ cup erythritol (or monkfruit)
  • 1 egg
  • ½ tsp vanilla extract

Steps

  • Preheat the oven to 350°F (175°C).
  • Mix all the ingredients until smooth.
  • Form into balls, flatten with a fork.
  • Bake 10-12 minutes until golden.
  • Let cool on the pan 5 minutes before handling.

Our tips

Use a peanut butter with no added sugar — sweetened versions throw off both the carb count and the texture. Monkfruit works as a 1:1 substitute for the erythritol; stevia is an option too, though it can taste more bitter depending on the brand.
